Black bean rice burgers
These vegetarian patties offer a healthy but satisfying alternative to the classic hamburger. Rich in vitamin B3 and phosphorus, they give a boost to your enamel and gum health, and they’re safe for a gluten-free diet.

- Ingredients:
- 1 can black beans
- ½ cup brown rice
- 1 small onion
- ½ green pepper
- 1 egg
- 2 teaspoons salt
- 1 tablespoon pepper
- 1 tablespoon chili powder
- 1 tablespoon cumin
- 1 teaspoon hot sauce
- 3 cloves garlic
- Instructions:
- Preparation: Cook brown rice with a teaspoon of salt.
- Open the can of beans and pour off the excess liquid. Dump into a large mixing bowl, and mash with a fork or potato masher. Use a food processor to mince the onion, green pepper and garlic, and then add to the bowl of beans. In a separate bowl, beat the egg, adding the chili powder, cumin, hot sauce and one teaspoon each of pepper and salt. Pour the spicy egg mixture and cooked brown rice into the large mixing bowl containing the beans and vegetables. Mix until the consistency is thick. Form into patties, and bake or fry.
