Whole-wheat pancakes with fresh fruit and low-fat yogurt
This is a tasty, healthy treat for a family breakfast.
- ¾ cup whole-wheat pastry flour
- ¾ cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 2 tablepoons sugar
- ¼ teaspoon salt ½ cup liquid egg substitute
- 1 cup fat-free milk
- 1 teaspoon vanilla extract
- Low-fat yogurt
- Preheat griddle. Whisk dry ingredients in a medium bowl. Add egg substitute, milk and vanilla extract, and whisk until smooth. Ladle ⅔ cup of batter onto preheated griddle and cook for 3–4 minutes or until golden. Top with low-fat yogurt and your favorite fruit. Enjoy!
